A pesto created only with Genoese PDO basil. PDO means Of Protected Origin and only the Liguria region can cultivate this precious raw material. Genoese PDO basil is the most precious basil in the world because it grows on hills over the sea, in a mild climate all year round. This microclimatic combination allows us to create a delicate and refined pesto. A good Italian pesto, to be declared such, must in fact obtain a perfect balance of the ingredients: basil, oil, dried fruit, cheese and garlic. No taste must prevail and no taste must be weak.
To enjoy our pesto in the best possible way, we recommend cooking "al dente" some excellent fresh trofie pasta, draining them and mixing in a pan for pasta with pesto. To complete the dish we recommend a sprinkling of Parmigiano Reggiano and fresh whole pine nuts.
